What’s for Lunch?

Spicy chicken wraps

Pan-fry chicken breast with lime, chilli and garlic served in a wrap or on a bed of salad. This simple recipe is great healthy treat to have for lunch.

Chicken breast, thinly sliced at an angle

generous squeezed ½ lime

fresh chillies (you decided on how hot you want it)

fresh garlic clove, chopped

olive oil

wraps or salad

roasted red pepper, sliced

a few sprigs coriander, chopped

Avocados are a great source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium.

 Let’s heat things up

Mix the chicken with the lime juice, fresh chillies and garlic.

Heat the oil in a non-stick frying pan then fry the chicken for a few of minutes – it will cook quickly so keep an eye on it. While the chicken is cooking, warm the wraps following the pack instructions or make your fresh salad.

Squash half an avocado onto each wrap or add to salad, add the peppers to the pan to warm them through then pile onto the wraps or salad with the chicken, and sprinkle over the coriander. Enjoy!

Quick, easy and healthy.

Tip: If you have kids who don’t like Chilli, simply leave out the Chilli for theirs. It’s just one ingredient. Really easy to cater to everyone’s taste buds.
