What is your very first memory of food?

My Mum’s Lasagne. When I was a child, I have fond memories of my family around the dinner table and the delicious smell of my Mum’s cooking, particularly her lasagne.

What’s the first recipe you learned to cook?

Spaghetti bolognese. The pasta was a big favourite in my family. My mom used to make the pasta from scratch and my brother, and I loved helping with this, particularly making a mess with the flour and the occasional throwing pasta onto the roof when she wasn’t looking.

Which food do you dislike to eat as a child?

This is a tough one, and I was always interested in taste, texture, colours and creating new combinations, so trying new food was exciting for me as a child. If I had to choose one, it would probably be Sushi.

What is one vital ingredient that you would take to a desert island?

Wow, just one? I would take whisky. Whisky can be used in many dishes and desserts as well as a drink to keep you warm and if needed to sterilise something.

What would a meal be that you would miss the most while stranded on an island?

Our Highland Burger with Haggis and cheese.

Which meal did you cook the most throughout lockdown?

My wife and I enjoyed cooking together during the lockdown. With the hours I usually do, we don’t often get time to spend together in the kitchen. We were very aware of the pandemic so healthy meals that boost your immune system was what we cooked mostly—loaded with garlic.

Where is the first place you ate once the restaurants reopened?

The Seaforth, of course.
